From the ones I have used, you easily left click and drag stuff exactly like how you would with a mouse.
The touch screen laptop I used had a pen that you could use on the screen, to click, drag or even write. There is a little button on this pen which, when presed, right clicks.

Alternatively, on the touchscreen devices I've used, you had to hold alt while you tapped the screen to simulate a right-click.
